It is coming into the winter months and we know what that means. Colds, flu, sore throats and chicken soup. Nothing makes me or my kids feel better than a bowl of warm soothing chicken soup. So I start making batches of chicken broth as soon as the weather starts getting cooler. Here is an easy basic chicken broth recipe that I use every year. It is a wonderful recipe that will help you get started before winter comes blowing in. Try to use the best ingredients you can afford.
Basic Chicken Broth
To a large stock pot add the following:
2 lbs chicken pieces, backs, necks, wings (or whole chicken)
4 Stalks celery with leaves – chopped.
2 Carrots chopped
1 Large onion chopped
2 springs fresh parsley
1 teaspoon real salt
1/2 teaspoon dried sage, thyme and basil crushed
1/4 teaspoon black pepper
3 bay leaves
6 cups filtered water
Cover and simmer for 2- 3 hours.
Remove chicken, discard vegetables, strain liquid through colander or sieve, pull meat from bones and set aside for another use. After the chicken stock cools you can remove any fat that might have formed on the surface.
Store finished chicken stock in food safe container for 3 days in refrigerator or up to 6 months in freezer.
