This easy vegetable soup is a good all weather soup not only to eat but to make an freeze for those times you just do not feel like cooking.
We all need to get more vegetables and this soup has them all – well not all but close.
Easy Vegetable Soup
2 stalks of celery sliced thin (1/2 cup)
1 yellow onion, chopped (1 cup)
1 carrot diced (1/2 cup)
1 small can of corn, drained
1 frozen box of french style green beans, thawed
1 small box frozen Butter beans, thawed
1 large can of crushed tomatoes, undrained
6 cups of vegetable broth or water
salt and pepper
Add the chicken broth or water and crushed tomatoes with juice in a stock pot. Add the vegetables and cook until the potatoes are fork tender. Season with salt and pepper to taste.
Crockpot Method: Add everything to a crockpot; cook until potatoes are fork tender.
Note: This soup is really good with cabbage; for ease toss in a small bag of shredded cabbage.
