Are you overrun by tomatoes this year? Or do you cook seasonally because right now tomatoes are in full season. Well, this is a quick and easy recipe for Summer Pico de Gallo will have you using up or buying more tomatoes for your next meal.
Before I begin I must admit I am not an avid lover of tomatoes. For years I felt like I was adopted because everyone else in my family loves them. At family reunions my Aunt’s would always ask me if I would like a tomato sandwich and my reply would always be the same – “no thank you I don’t like tomatoes”. At that point I felt the room go silent then everyone at once would say “WHAT? You don’t like tomatoes?” or “I’ve never heard such a thing in my life”. So over the years I have tried to like them. I will say sliced fresh off the vine tomatoes are not appealing to me in the least but mix them with onion, salt, fresh herbs and a little lime juice and I am in heaven.
Pico de Gallo or Salsa fresco can be eaten with anything – not just Mexican food. It is a wonderful dish serve topped on grilled or baked chicken and I have even eaten it on a baked potato and scramble eggs. However, if you want to eat it with chips as a side dish then it is awesome as well.
So let’s get cooking….actually no cooking in involved here!
Depending on the size of the crowd you will be feeding all quanties can be adjusted. For this purpose I am making it for 4 people.
10 Roma tomatoes
1 purple onion
1 cup fresh cilantro leaves
2 Jalapenos (seeds removed if you want mild)
1 lime juiced
kosher salt to your taste
First, dice the tomatoes and onions. Depending on your taste you can add more onion or go heavier on the tomato. Basically, you want an equal amount of both for the best flavor.
Now slice up the jalapenos and remove the seeds. Dice the jalapenos up fine, you want the heat throughout the Pico de gallo – not in chucks because you will not be making any friends leaving huge chucks of jalapenos lurking under a tomato.
Chop up the cilantro, rough chop is fine. Some people dislike this herb and it is one of those herbs that you either love or hate. I have never met anyone on the fence with this one.
Add those four ingredients into a glass bowl. Slice the lime in half and squeeze half of the lime juice over the tomato mixture. Add kosher salt; now taste it and adjust seasoning to your liking.
