I like to make this as a spread and store it in the refrigerator for a quick easy chicken salad sandwich on the go. You can make this a smooth or chunky as you like.
EASY CHICKEN SALAD
1 (3 1/2 to 4 pound) chicken fresh or leftover cooked and coarsely ground
1 1/2 cups chicken broth (more if needed)
1 cup chopped sweet pickle relish
3 large boiled eggs, chopped fine
1 cup finely diced celery
Sea salt and fresh black pepper
1/4 teaspoon apple cider vinegar (if needed) for zest. (optional)
In a bowl mix together chicken, chopped eggs, diced celery and sweet pickle relish. Add broth to mixture a little at a time. Add mayonnaise, salt and pepper to taste. Add a little apple cider vinegar for a bit of add kick. It is optional but I like vinegar.
