If you are like me and crave salty, crunchy, cheesy foods but know it would be better if you did not eat them; then this is the perfect thing for those cravings. Having type 2 diabetes this easy recipe for Parmesan cheese crisps does nothing to my blood glucose levels and thank goodness because my weakness for those little square orange crackers was huge.
Parmesan Cheese Crisps
1 cup Finely grated block of Parmesan cheese (do not use the kind in the green shaker can)
400 F oven
1. Mound 2 tablespoons of the Parmesan cheese on your liner; spacing mounds 3 inches apart. This stuff will spread.
2. Bake in your oven for 6 minutes; watching carefully as to not burn your cheese.
3. Once the cheese has melted and turned a light golden brown it is done. Let the crisps cool before removing them from the liner.
No need to add extra salt. Parmesan cheese is naturally salty and oily.
Enjoy with soups, crumbled over salads for crunch instead of croûtons, eat them plain or with your favorite healthy topping.
Try some red pepper flakes or Cayenne pepper for a real spicy kick.
You might be thinking “hey I can cook this in the microwave”. Let me tell you don’t. It makes them chewy 95% of the time. However, it could be my microwave and the length of time I cooked them. I just have not had any success. Not to mention I’m trying to go without my microwave for various reasons.
