Yields 8 servings
1 large onion, diced
2 envelopes ranch-style dressing mix
1 envelope taco seasoning mix
2 cans shoe peg corn, drained
1 can black beans, rinsed
1 can pinto beans, rinsed
1 can kidney beans, rinsed
1 can stewed tomatoes with juice
1 can Rotel with green chilies, with juice
Corn Tortilla chips
Brown meat; drain of any fat Add onions and cook until tender; drain. Add all other ingredients, and bring to a boil. Reduce heat and simmer for about 30 mins. Top each serving with grated cheddar cheese and a dollop of sour cream if desired.
After browning meat & onions place all ingredients in crock-pot and simmer on low for 1 hour.
